Taliouine Saffron Capital
Taliouine produces the finest saffron in the world — a designation contested by Iran but supported by blind tasting. The village in the Anti-Atlas foothills sits at 1,200 metres in the microclimate that the Crocus sativus requires: cold nights, warm days, and the particular soil of the pre-Saharan Souss. The harvest lasts three weeks in October and November. The entire village participates.
