Ouezzane Olive Oil Tradition

Ouezzane is the olive oil capital of northern Morocco — the hills around the city are covered in ancient olive groves, and the oil pressed here has been traded across the Maghreb for centuries. The traditional stone oil presses still operate during the November harvest. The oil is different from the southern Moroccan product: greener, more bitter, more complex.
